Healthy salad in a jar

Looking for a tasty, yet healthy alternative for your lunch? If you’d like it to be handy as well, we’ve got just the thing for you! A salad in a jar is not only practical, but can be entirely fine tuned to your personal preferences too. Our favorite recipe is the following:

For the yoghurt vinaigrette

  • 5 deciliter full fat yoghurt
  • 2 table spoons grain mustard
  • 1 table spoon honey
  • Dash of vinegar (apple, raspberry,…)
  • Dash of nut oil (linseed oil, olive oil,…)
  • Salt & pepper

For the salad

  • 200g feta or mozzarella cheese
  • 4 cups of cooked quinoa
  • 1 can of tuna
  • Pine nuts
  • Thyme
  • Rucola
  • Lime juice, spices & spring onions (if you’d like)

Wash the quinoa well and then cook it using the instructions. Finish it off with lime juice, spices, spring onions,…

When the quinoa is prepared, you’re ready to start filling the jar. Start with the vinaigrette, then add the quinoa, tuna, feta or mozzarella cheese, rucola, thyme and finally the pine nuts.

Nice to know

Quinoa is a seed that contains a lot of fiber, magnesium, potassium and natrium. It’s a good source of vitamin A, B1, B2, B3, B6, B11 and E. It’s got a low glycemic index and contains proteins that are easily absorbed.

Enjoy your meal!
